Mediterranean Shrimp Scampi

Ingredients: 
1- 16 ounces package SeaPak® Shrimp Scampi (frozen)
1 zucchini, chopped
1 14-oz can of quartered artichoke hearts, well drained
¼ cup sun dried tomatoes
1 Tbsp capers
Juice of 1 lemon (about 2 TBS)
1 ¼ cups uncooked orzo pasta (may substitute rice)
Instructions: 

Heat large 12’’ skillet* for 1 minute on medium high heat. Add shrimp and zucchini sauté for 8 minutes, stirring periodically. Add artichokes, sun dried tomatoes, capers and lemon juice and stir. Continue sautéing for 3-5 minutes (or until shrimp is fully cooked) stirring periodically. Serve over orzo pasta.

*Cooking Note: Smaller skillet will require increased cook times*

I made this for dinner last Friday. We loved it!! We normally eat rice but I decided to serve this with orzo, as suggested. It was very delicious. We will have it again soon.

  • I am finally convinced that the cholesterol found in shrimp isn’t going to raise my blood cholesterol and may actually decrease my risk of heart disease.  Are there any other nutrients found in shrimp that can make me healthier?

We already know that shrimp is low in fat and calories. But if you are concerned about cholesterol, there is good news. You do not have to give up shrimp! Research shows and dietitians concur that the high percentage of "good fats" in shrimp reduces the impact of cholesterol. So enjoy shrimp as part of a balanced - and delicious - diet.
